How to prepare Cheese Quesadilla

  1. Melt half the butter in a frying pan over a medium-high heat. Add the chicken and cook for 5-6 minutes, stirring, until golden and cooked through with no pink inside.

  2. Add the pepper and onion and cook for 4-5 minutes until softened. Season with the salt and tip onto a plate.

  3. Lay the tortillas on a board. Scatter cheese over one half of each, then top with the chicken mixture and a little more cheese. Fold the other half over.

  4. Wipe out the pan, add a little of the remaining butter and heat over a medium heat.

  5. Cook the quesadillas one at a time for 2-3 minutes on each side, pressing down gently with a spatula, until golden and crisp and the cheese has melted.
