How to prepare Chicken Souvlaki
Mix the chicken with the olive oil, lemon juice and most of the garlic. Cover and marinate in the fridge for at least 2 hours, or overnight.
For the tzatziki, squeeze the grated cucumber really dry in a clean cloth, then stir it into the Greek yogurt with the remaining garlic. Chill until needed.
Thread the chicken onto skewers (soak wooden ones in water for 30 minutes first).
Heat a griddle pan or barbecue until hot. Cook the skewers for 10-12 minutes, turning every few minutes, until charred in places and cooked through, with no pink inside.
Warm the pittas for 30 seconds each side in a dry pan.
