About this Guacamole

Good guacamole is mostly about ripe avocados and a generous squeeze of lime, which also keeps the colour bright. Mash them roughly, leaving some chunks, and fold in finely chopped tomato, red onion, chilli and coriander. It is dairy-free and vegan, and goes with everything from tortilla chips to tacos.

How to prepare Guacamole

  1. Scoop the avocado flesh into a bowl and sprinkle it with the lime juice straight away.

  2. Mash with a fork until it is as smooth or as chunky as you like. Chunky is best.

  3. Add the tomato, onion, chilli, coriander and salt, and fold everything together gently.

  4. Taste, and add more lime juice, salt or chilli until it tastes bright and well seasoned.

  5. Serve at once, with tortilla chips, or spooned onto fajitas, burritos or quesadillas.

Tips

  • To check an avocado is ripe, press gently at the stalk end: it should give slightly. Rock-hard ones will not mash.
  • To keep it green for a few hours, press cling film directly onto the surface so no air touches it.
  • Taste it with a chip, not a spoon, as the chip is salty.
