About this Lasagna

Lasagna is a layered dish with three parts: a slow beef and tomato ragu, a smooth white sauce, and pasta sheets. Make each part properly and the whole is far greater than the sum. How to prepare Lasagna

  1. Heat the oil in a large pan over a medium heat and cook the onion and carrot for 8 minutes until soft. Add the garlic for a minute.

  2. Add the mince, break it up and cook for 8-10 minutes until browned. Stir in the tomato puree, then the chopped tomatoes, a splash of water and half the salt and pepper. Simmer gently for 40 minutes until thick.

  3. For the white sauce, melt the butter in a pan, stir in the flour and cook for 1 minute. Add the milk a little at a time, whisking, then simmer for 5-8 minutes until it coats the back of a spoon. Season with the remaining salt and pepper.
