How to prepare Margherita Pizza

  1. Mix the flour, yeast, salt and sugar in a large bowl. Add 190 ml of lukewarm water and half the olive oil and stir to a rough dough.

  2. Knead on a floured surface for 8-10 minutes until smooth and elastic. Put it in an oiled bowl, cover with a damp cloth and leave somewhere warm for about 90 minutes until doubled in size.

  3. While it rises, crush the drained tomatoes with a fork and season with a pinch of salt. Do not cook the sauce; it cooks on the pizza.

  4. Heat the oven to its highest setting (240-250C) with a baking tray or pizza stone inside to get really hot.

  5. Divide the dough in two. On a floured surface, stretch or roll each piece into a thin 25-28 cm round, leaving the edge a little thicker.
