About this Spaghetti Bolognese

A proper bolognese is not complicated, it is just patient. Beef is browned well, cooked down with a base of onion, carrot and celery, then left to simmer until the sauce is thick and glossy. It makes a generous amount for four and freezes brilliantly, so it earns its place in any weekly plan.

  • 400 gSpaghetti, dried
  • 40 gParmesan, finely grated, to serve
  • 10 gFresh Basil, torn, to serve

How to prepare Spaghetti Bolognese

  1. Heat the oil in a large, heavy pan over a medium heat. Add the onion, carrot and celery and cook gently for 8-10 minutes, stirring, until soft and sweet but not browned. Add the garlic for the last minute.

  2. Turn the heat up, add the mince and break it up with a wooden spoon. Cook for 8-10 minutes until it has lost its pink colour and begun to brown and sizzle.

  3. Stir in the tomato puree and cook for 2 minutes, then add the chopped tomatoes, half a tin of water, the salt and pepper.
