How to prepare Chilli con Carne
Brown the mince in a large, heavy pan over a high heat for 8-10 minutes, breaking it up, until no pink remains and it is nicely coloured. Spoon off any excess fat.

Stir in the garlic, paprika, cumin and chilli powder and cook for 1 minute until fragrant.
Add the chopped tomatoes, half a tin of water and the salt. Bring to the boil, then simmer gently, partly covered, for 40 minutes, stirring now and then.
Stir in the kidney beans and cook for another 10 minutes until the sauce is thick and glossy. Taste and adjust the salt and chilli.
While the chilli finishes, cook the rice according to the packet instructions.
