A great cheeseburger is simple: good beef mince, a hot pan and as little handling as possible. Shape the patties lightly, season at the last moment, sear hard and melt the cheese over the top. The toasted bun and crisp, cool toppings do the rest.

How to prepare Classic Cheeseburger

  1. Divide the mince into 4 and shape each portion into a loose patty about 2 cm thick and a little wider than the bun. Press a shallow dimple in the middle of each with your thumb. Chill until you are ready to cook.

  2. Heat a heavy frying pan or griddle over a high heat until very hot.

  3. Season the patties on both sides with the salt and pepper just before cooking. Cook for 4-5 minutes on the first side without moving them.
